Yesterday I baked Brownies for my local Police and Fire Departments.

And today I did what I have been doing every Christmas Day for the past five years, I spent a couple of hours at a nursing home, playing checkers, and socializing with some of the residents there.</font c>

I spent Christmas with my family.

I cooked rabbit etouffee for Christmas dinner! [img]graemlins/thumbsup.gif[/img]

  • 2 fresh rabbits (2 - 2 1/2 lbs each)</font>
  • 2 Tbsp of Cajun Spice Mix (*Note see recipe for Cajun Spice Mix)</font>
  • 1 Tbsp. peanut oil</font>
  • 2 oz. andouille sausage sliced</font>
  • 2 Tbsp. all-purpose flour</font>
  • 2 oinions, chopped</font>
  • 2 red or green bell peppers, cored, seeded & chopped</font>
  • 1 stalk celery, chopped</font>
  • 3 cloves of garlic, minced</font>
  • 2 cups of of chicken stock</font>
  • 1 1/2 Tbsp. Worcestershire sauce</font>
  • 1 Tbsp. tomato paste</font>
  • 1 Tbsp. Tabaso sauce (add more or less for desired heat)</font>
  • 8 scallions, trimmed & chopped</font>
  • 2 Tbsp. chopped fresh parsley</font>
  • 4 cups cooked long-grain white rice</font>


Cut each rabbit into 8 pieces and season with Cajun Spice Mix.

Heat a Dutch oven over medium-high heat. Add 1 tsp. peanut oil and heat until hot.

Add half of the rabbit pieces and cook until brown (3-5 minutes per side).

Transfer meat to a plate and set aside.

Add 1 tsp. oil to the pan and brown the remaining rabbit in the same manner. Set aside.

Add andouille sausage to the pan and cook, stirring, until lightly brown, 2 to 3 minutes. Remove from the pan; dain on paper towels.

Add the remain 1 tsp. of peanut oil and flour to the pan and cook until the flour is a golden brown (2-3 minutes).

Add onions, bellpeppers, celery (*Note - I omit both the bell peppers & celery, as I'm alergic to bell peppers and I don't like celery), garlic; cook, stirring, for 5 minutes.

Stir in chicken stock, Worcestershire sauce, tomato paste and Tabasco; bring to a boil, stirring.

Add the browned rabbit & andouille sausage to pan.

Cover and simmer over low heat for 1 hour, stirring occasionally, until the rabbit is tender.

Skim off any fat, stir in scallions & parsley.

Serve over rice

I haven't eaten rabbit since I was a child, but I have to say that sounds good!

I have spent the past five days and today playing with my grandchildren and watching them open presents. Fun!

I did all my Christmas shopping within the 55 minutes of the stores closing. Decided I was hungry and could'nt find any friend free to go to a restraunt. Single and do not cook, decided to buy a angus certified prime rib roast and use my George Forman grill. Since I needed a side dish decided the pasta sauce in the fridge was un-opened and made a little pasta. Reminded at 4 a.m. that I opened the sauce jar last week! Lots of fun not! Hence why I should not cook!!!!!

Because, in the 13 years my wife and I have been married, we've never had a white Christmas.. We spent 10 Christmases in San Diego, CA..

The cabin was only at 1,500 ft. so there wasn't any snow when we got there last night. We had brought some groceries with us, so we made a simple turkey (breast) dinner last night.. When we woke up at 5a (we have a 9 year old daughter), the ground was white. We were able to open our presents with the snow falling outside. Then, we went outside, made a snowman, and had a snowball fight. My wife said it was her best Christmas yet.

Spent christmas with family, some of which i only get to see 2 times a year. It was a great time for sure.

I spent mine ministering to the sick.... only thing was/is, they all live right here with me.

Everyone (but me) has had a horrible stomach flu. No dinner yet, no treats, no eggnog.

We have though, watched a lot of movies.

They're thinking of naming a new brand of paper towels after us... lol... 15 minutes of fame, here we come.

Great deposits in the memory bank with family on Christmas Eve & Day.......couldn't have had a better Christmas!
